Cast Iron Wok
Being an amateur of cast iron cook ware, I was delighted to find the cast iron wok offered by the Wok Shop to replace the wok stolen by the movers.
The Wok Shop provided fast and exempelary service in shipping the wok. Closely following their instructions on how to cure the wok I was delighted with its utility. It proved to be lighter than my old cold steel wok and has a better distribution of heat. My western cast iron now sits oiled and stored stored under the stove waiting for that rare occasion when the wok will not do.
And the price could not be beat.

The Real Deal
Although it looks a little rough around the edges and primative, this nicely weighted, cast iron wok is the real deal and a pleasure to work with.
It heats evenly and holds the heat while ingredients are being added, something a lot of lighter weight, carbon steel woks don't. Once seasoned properly it is as good as Teflon without the toxic chemicals (one reason I bought it). It is not very deep, but easily stirs up a main dish stir fry for one or two people, or a side for four.
You do need to use a ring with it, and because of this it takes a little longer to heat on an electric stove. However it is also great to use for Indian cooking and is great to cook traditional flat breads on; you can turn it upside down to cook authentic Arab lavash, naan or flour tortillas.
Remember to keep it clean, seasoned and dry and it will last a lifetime.
